The Mercado Independencia is one of the biggest and busiest central markets in Morelia. I love going, even though I don’t go as often as I would like. Many of the shop keepers have become my friends over the years, the lady working on her display of vegetables is one of my best friends at the market. She always remembers me, makes sure I get the fresh vegetables I want, and is always a joy to talk to. What more could I want? Markets like this aren’t for people who don’t want to see where their meals come from, but it is a study in what a little competition does to prices and quality.

Yes, when you think of it – there is little need for the “nose to tail” movement here…
